Our talented Greek chef, Paris Kostopoulos, is here to show you his courgette fritter recipe, a classic mezze dish. It's a delightful pairing of fresh courgettes (zuccini), feta cheese and loads of aromatic herbs, Ouzo at the ready!
Here are the ingredients you need to get lined up:
- 150g courgette (grated)
- 50g carrot (grated)
- 2 tbsp dill (finely chopped)
- 1 tbsp mint (finely chopped)
- 2 tbsp parsley
- 2 tbsp red onion (chopped)
- 2 tbsp spring onion (chopped)
- 80g Feta cheese
- 2 tbsp plain flour
- 1 large egg
- salt and black pepper
- ½ tsp baking powder
- 2 tbsp Greek ouzo
- 3 tbsp extra virgin olive oil
- sunflower oil (for frying the fritters)
