Our next recipe is just perfect for a warm, sunny day. Juan and Pedro from Mar Menor Beachclub in Spain are here to show you how to make Salmorejo Cordobes, a cold tomato soup which originates from Andalucia. Made from tomatoes, bread, oil and garlic it's Gazpacho's thicker, creamier cousin. Enjoy!
Here are the ingredients you need to get lined up:
- 1kg tomatoes (roughly chopped)
- 200g bread (torn into chunks)
- 100ml extra virgin olive oil
- 1 clove garlic (roughly chopped)
- 1 hard boiled egg (chopped)
- 40g Spanish Serrano ham (chopped)
- 10g salt
- a dash of vinegar
