- 750g beef chuck or top rump(cubed)
- 350g baby onions(skinned)
- 7tbsp extra virgin olive oil
- 1 tbsp tomato puree
- 1medium tomato (grated)
- 150ml dry red wine
- 2 tbsp red wine vinegar
- 1 cinnamon stick
- 2 dry bay leaves
- 3 cloves of garlic
- 4 all spice berries
- 3 cloves
- 2 tsp sea salt
- ½ tsp ground black pepper
- ½ tsp sugar
- sprig of fresh rosemary
